HOGUST Continues

Hogust continues with these specials:
  • Slow Cooked Pork Belly Reuben Sandwich - Chef Kevin slow cooked the pork belly for 5 hours. Then he reduced the juices into a sauce for final cooking when ordered. I hear "pork belly" and I think unsmoked bacon and fatty. This pork belly is very lean, with most of the fat having been cooked off.
  • Scrapple Snack - House made head cheese scrapple (yes scrapple freshly made by Chef Kevin) over beer braised sauerkraut with curry ketchup and fried sage leaves
  • Beer Braised Schwieneshacken finished with high heat to crisp the outside. Authentic Bavarian pork knuckle, this dish is the definition of hog heaven (if you aren't a hog).
  • Knack & Beans - Riekers double smoked bacon, knackwurst, with bbq baked beans.
  • Farmers Plate - a trio of pork items. Should be ready by Tuesday evening
